Broccoli Stuffed Manicotti

A new twist on a traditional pasta dish, this broccoli-stuffed manicotti is delicious.  Elegant enough for entertaining, yet perfect for a casual night at home as well.  It requires a little time to assembe, but is well worth the wait!

Ingredients:
10 uncooked manicotti noodles

Filling:
1 cup light ricotta cheese
1 cup frozen broccoli cuts
1/4 cup parmesan cheese
1/4 cup chopped onion
1/4 tsp salt
1/8 tsp pepper

Sauce:
2 cups prepared spaghetti sauce
1 tsp dried basil
2 garlic cloves, crushed
2 Tbsp parmesan cheese

Instructions:
Heat oven to 350 degrees F.  Cook manicotti noodles to desired doneness as directed on package.  Drain; rinse with hot water.  Pat dry.

In medium bowl, combine all filling ingredients; mix well.  Fill each manicotti noodle with 2 Tbsp filling mixture.  Place in ungreased 12x8 inch (2-quart) baking dish.

In small bowl, combine spaghetti sauce, basil and garlic; mix well.  Spoon sauce over filled noodles.  Bake at 350 for 30-40 minutes until thoroughly heated.  Sprinkle with 2 Tbsp parmesan cheese; let stand for 2 minutes. 

Servings: 4-5
